You don’t have to worry, these are gluten-free and easy to make pancakes layered in a sweet and appealing look, and we call them the Black Forest Protein Pancakes! They are super chocolatey paired with the world’s renowned superfoods – chia seeds, cherries, Greek yoghurt – that is packed with protein to boost you throughout the day.

What you’ll need:

  • 1 banana (mashed)
  • 2 eggs
  • 1 tbsp cacao powder
  • 1 tbsp oats
  • 1/4 tsp baking powder (this is optional)
  • 1 cup frozen cherries
  • 1 tbsp chia seeds
  • 1 tbsp lemon juice
  • 2 tbsp sweetener of choice (it can be honey, agave, coconut sugar, brown rice syrup, etc. Your choice!)
  • 1 cup yoghurt (Greek, Coconut, Hazelnut, Soy, etc)

How to make the super breakfast Black Forest Pancakes:

Super breakfast with Black Forest Protein Pancakes

-Mix the banana, eggs, cocoa powder, oats and baking powder. Cook in oil on a medium-high temperature pan or griddle, keeping the pancakes small as they can be delicate.
-To make the cherry chia jam, combine the cherries, chia seeds and lemon juice. Sweeten to taste.
-Layer the pancakes with yoghurt and the cherry jam to create a beautiful stack as pictured.
