Recipe: Raw Kale, Roasted Hazelnut, and Grapefruit Salad
- Pink grapefruit – 2
- Red onion – ½, thinly sliced and divided
- Fat-free yoghurt – ½ cup
- Lemon juice – ¼ cup
- Kosher salt – ½ teaspoon
- Olive oil (extra-virgin) – 2 tablespoons
- Black Pepper – ¼ teaspoon
- Lacinato kale – 8 ounces, thinly sliced
- Baby kale leaves
- Toasted hazelnuts – 1/3 cup, finely chopped

Kale Salad Dressing
Preparation time: 15 Minutes | Yield: 4 servings (size – ¼ cup)
- Peel off the grapefruit and segment it.
- Reserve 3 tablespoons of juice in the large bowl.
- Mince 3 rings onion.
- Now, add these to the grapefruit juice along with the lemon juice, oil, salt, pepper, and yoghurt.
- Whisk all these ingredients until they get mixed properly.
- Toss this mixture in kale. Top with the remaining grapefruit, hazelnuts, and onions. Voila! Your salad is ready to serve.
