Ingredients

  • Pink grapefruit – 2
  • Red onion – ½, thinly sliced and divided
  • Fat-free yoghurt – ½ cup
  • Lemon juice – ¼ cup
  • Kosher salt – ½ teaspoon
  • Olive oil (extra-virgin) – 2 tablespoons
  • Black Pepper – ¼ teaspoon
  • Lacinato kale – 8 ounces, thinly sliced
  • Baby kale leaves
  • Toasted hazelnuts – 1/3 cup, finely chopped

Kale Salad Dressing

Preparation time: 15 Minutes |  Yield: 4 servings (size – ¼ cup)

  1. Peel off the grapefruit and segment it.
  2. Reserve 3 tablespoons of juice in the large bowl.
  3. Mince 3 rings onion.
  4. Now, add these to the grapefruit juice along with the lemon juice, oil, salt, pepper, and yoghurt.
  5. Whisk all these ingredients until they get mixed properly.
  6. Toss this mixture in kale. Top with the remaining grapefruit, hazelnuts, and onions. Voila! Your salad is ready to serve.
