Kale is getting popular than ever before. Kale is the super food, which has a staying power. This leafy, dark green veggie has been the part of dinners since the Roman times, and it’s been very common across the Europe. This veggie hails from a cabbage family that also includes collards, cauliflower, and broccoli.

Raw Kale, Roasted Hazelnut, and Grapefruit Salad

Ingredients

  • Pink grapefruit – 2
  • Red onion – ½, thinly sliced and divided
  • Fat-free yogurt – ½ cup
  • Lemon juice – ¼ cup
  • Kosher salt – ½ teaspoon
  • Olive oil (extra-virgin) – 2 tablespoons
  • Black Pepper – ¼ teaspoon
  • Lacinato kale – 8 ounces, thinly sliced
  • Baby kale leaves
  • Toasted hazelnuts – 1/3 cup, finely chopped

How to prepare it?

Preparation time: 15 Minutes | Yield: 4 servings (size – ¼ cup)

Step 1

Peel off the grapefruit and segment it. Reserve 3 tablespoons of juice in the large bowl. Mince 3 rings onion. Now, add these to the grapefruit juice along with the lemon juice, oil, salt, pepper, and yogurt. Whisk all these ingredients until they get mixed properly.

Step 2

Toss this mixture in kale. Top with the remaining grapefruit, hazelnuts, and onions. Voodoo! Your salad is ready to serve.
